Abstract
The Star-Chef Self-Assessment Tool was developed to provide an assessment tool that culinary professionals could use to track their own competencies. The instrument for competency measurement (Star-Chef Instrument) which consists of 164 items was field tested amongst 114 culinary professionals in 4-star and 5-star Malaysian hotels. The questionnaire was analyzed using Winstep software, software based on Rasch measurement model for reliability and validity test. Item reliability for the Star-Chef Instrument is 0.94 with item separation index of 4.05. Person reliability is 0.99 with person separation index of 8.70. In terms of unidimensionality aspect, the raw variance explained by measures is 41.4% closely match the expected 41.2%, passing the 40% limit expected in Rasch analysis. The unexplained variance in the 1st contrast of good 5.6% is obtained. Overall, the result shows that the Star-Chef Self-Assessment Tool is highly reliable and valid in measuring the competencies of culinary professionals. This study is of importance as workers competencies assessment; in view of the need of industrial institutions to evidence workers’ competence can be accomplished.
